Ujikintoki Kakigori (Japanese Green Tea) Shaved Ice Recipe

Matcha, or green tea powder, is a popular ingredient in Japanese cooking. It can be found in sweet and savory recipes, and has a slightly grassy, mellow flavor. It’s also packed with antioxidants and amino acids, which make it a healthy addition to any diet. Paired here with sweet red bean paste, it forms a classic and well-loved kakigori flavor combination that you’re sure to enjoy. 

 

 

Ingredients:

4 tsp. Unsweetened Green Tea Powder (also known as Matcha powder)

2 ½ Tbsp. Sugar

 ½ Cup Hot Water

Sweet Red Bean Paste (recipe here)

Sweetened Condensed Milk

Mochi (optional)

Sliced Strawberries (optional)

 

 

Preparation:

  • Combine the matcha powder and sugar and mix well with a whisk. Add the hot water and stir until the powder and sugar are completely dissolved. Chill the syrup until ready to use. 
  • Shave the desired amount of ice into a glass or bowl. Pour the matcha syrup over the top. Top with a few spoonfuls of sweet red bean paste, and drizzle generously with sweetened condensed milk. Garnish with mochi and strawberry slices, if desired, and serve. 

 

 

Tips:

Be sure to buy an unsweetened matcha powder so your syrup turns out right. Look for Japanese-produced matcha, with a bright green color and grassy aroma. This one on Amazon works great and has tons of legit reviews. The syrup recipe can be scaled up to make a larger amount, and stored in the refrigerator for up to two weeks. Try adding some to a glass of cold milk for an easy treat. If you don’t want to make the sweet red bean paste, it can be purchased online or in specialty stores.
