Create a custom lei for each child to wear during the party. Use a large flower punch to create a custom lei for each child to wear during the party. You can make paper flowers from cardstock and write the kid’s Hawaiian name on top. Lei-making is a very simple craft. Even preschool-aged children can do with a little help from their parents. Provide string and fabric flowers with holes punched in the middle. Kids can select their favorite flowers and string them together to make custom leis.

Preparation

In a large bowl, combine pineapple, tomatoes, cilantro, red onion, and jalapenos. Add lime juice and toss to coat.

Season to taste with salt, pepper, and hot pepper sauce, if using. Allow flavors to blend at room temperature for 30 minutes, or chill until serving time. Serve with tortilla chips.

Island Cakes Recipe / 8 servings

  • Ingredients
  • 16 rosemary twigs
  • 8 cream-filled oval yellow sponge cakes (such as Twinkies)
  • ¼ cup pineapple preserves
  • 1 cup canned frosting
  • 2 tablespoons cocoa powder
  • Sliced almonds

Preparation

Insert two rosemary sprigs into one end of each yellow sponge cake. Lay cakes, flat-side down, on a serving platter. Heat preserves until melted. Brush melted preserves over tops of cakes.

In a small bowl, combine frosting and cocoa powder. Transfer to a disposable decorator bag with a writing tip. Pipe frosting in a diamond pattern on tops and sides of cakes. Insert a sliced almond into each diamond. Cover and chill before serving.

DIY All-Natural Shave Ice

Shave the ice using an appropriated blender or shave ice machine. Puree fresh or frozen fruit in the blender and sweeten your puree as needed with a purchased or homemade syrup or a dollop of jam or jelly. (Try mangoes, raspberries, pineapple, peach, blackberries, watermelon, pink grapefruit, the brighter colors, the better). To achieve optimal consistency, thin your puree with juice or water, but be careful of watering your puree down too much. As the shave ice melts into your syrup, the flavor will become more muted. For a richer taste, you can add to your shave ice a drizzle of sweetened condensed milk or a scoop of ice cream at the bottom.

How to prepare the basic syrup

Using a ratio of 1 part water to 1 part granulated sugar, add the water and sugar to a saucepan and heat until sugar fully dissolves. Your shave ice syrup can keep in the refrigerator in a sealed bottle up to three or four months. You can infuse your basic syrup with lemon, mint, ginger, other flavors you like. Just add a generous amount of your favorite flavoring (roughly chopped mint leaves, curls of lemon zest, thick slices of ginger, whole spices etc.) and let them steep in the warm syrup for about a half hour, then strain out the solids.
